COMPOUND BUTTER? PERFECT FOR TOAST BUT ALSO SERVES AS A FLAVOR-PACKED COOKING FAT!

I think my infatuation with compound butters came when Kris and I first started dating. As a single city boy for the majority of my life in Manhattan the only thing I was obsessed over was going to the trendiest lounge or restaurant. Oh and fashion, obviously! Kris was quit the opposite, hobbies included cooking some amazing, usually ethnic cuisine for hours in his kitchen in Queens; canning some sort of seasonal produce or fruit; and of course baking bread. He bakes bread at least once a week and has been doing so since he was in college, minus those summer months when the last thing you want to do is turn on the oven.

Making compound butter to pair with Kris’ bread has always been a treat of mine and super easy to whip up in just a few minutes. What I love about flavored butter is you can add some pretty wonderful seasonal ingredients that dress up an ordinary dinner. It’s perfect for toast but also serves as a flavor-packed cooking fat (wow, is it amazing with roasted vegetables!).

Today we’re making three types of delicious compound butters. A seasonal ramp butter with pungent flavors of onion and garlic; a spicy Mexican-style butter with chili flakes, cilantro and lime zest; and an earthy Indian butter with cumin, Kashmiri chili powder, turmeric, and curry leaves. We’re making the butters in our new French Butter Crock which keeps butter safely sealed at room temperature as it’s intended to be.

Ramp Compound Butter

  • 1 stick of room temperature butter
  • 8 ramps minced (including greens)
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black better

Directions: Mash butter, ramps, salt and pepper in a small bowl. Serve at room temperature. Can be refrigerated and frozen.

Spicy Mexican Compound Butter

  • 1 stick of room temperature butter
  • 1 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 2 teaspoons of minced cilantro
  • Zest of 1 lime

Directions: Mash butter, red pepper flakes, salt, garlic powder, cilantro, and lime zest in a small bowl. Serve at room temperature. Can be refrigerated and frozen.

Indian Masala Compound Butter

  • 1 stick of room temperature butter
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon Kashmiri chili
  • 1/4 turmeric
  • Pinch of hing (asafoetida)
  • 3 curry leaves minced

Directions: Mash butter, ground cumin, Kashmiri chili, turmeric, hing, and minced curry leaves. Serve at room temperature. Can be refrigerated and frozen.
